I have had a number of people ask if I do any gluten free baking. I do but the selection is not huge. I have also recently had some friends whose husbands have been diagnosed with diabetes and one of them has a wheat sensitivity. So, I went on the hunt for some recipes that would be helpful for my friends. I discovered a blog called Chocolate Covered Katie. Yes, there are a lot of recipes that included chocolate. But most of them are wheat free and sugar free. I saw one for oatmeal raisin cookie Larabars. I had the ingredients in stock so, okay let's try them. ![]() Well, they are very easy to make. Although they only make 4 bars. If you made balls you could get more servings. They were okay, if you are used to sugar free they would probably be great. Roy thinks I should substitute another nut for the walnuts, they make the bars a bit bitter. My mother was not impressed at all. I did not mention that they were sugar free before I offered a bit to her. There are few other versions of the bar that include chocolate. I will be trying them soon and will let tyou know how they fair.
