I have been trying to expand my Gluten Free items. Today I was trying my Espresso Cookie. Since I make this cookie weekly I didn't bother to get out the recipe, after all, I was just trying out a new flour. When the cookies came out they were very big and much lighter in colour. I took them and some other samples to meet with friends to see what they thought. One said "There isn't much taste". Another said "They are very crumbly." I took note and thought maybe they would come out chewier if I made them vegan. Later in the conversation, I was telling them how much chocolate was in the cookie and then I remembered that I had forgotten the cocoa. Since I had not baked all of the dough before I went out, I was able to add the cocoa and then bake them. Look at the difference. The taste is improved as well.
